While you can use any mango, we recommend Kesar (or Alphonso) because they are, without a doubt, some of the most flavourful varieties available.

Easy Kesar Mango Kulfi Recipe
Makes approximately 16 servings (depending on your mold size)
Ingredients:
400g Ripe Kesar Mangoes or Kesar Mango Pulp
400g Condensed Milk
600g Whole Milk
120g Cream
Optional Ingredients:
1 teaspoon Cardamom powder
A pinch of Saffron
Chopped pistachios and almonds
How to Make Mango Kulfi: Step-by-Step Instructions
- Peel, cut, and blend the mangoes
If you’re lucky enough to find Kesar mangoes, peel and cut them into cubes, then blend them into a smooth purée. If they’re out of season, use canned Kesar mango pulp, available in many UK shops, especially in Indian neighbourhoods or supermarkets like Waitrose.
- Reduce the milk
If following the traditional method, reduce the milk by half. This can take up to 30 minutes, depending on the quantity and your stove’s power.
- Add condensed milk and reduce further
Add the condensed milk and continue reducing for another 7 minutes. (If you’re short on time, you can skip steps 2 and 3, but note that the results will differ. Cutting corners may lead to a kulfi with ice crystals rather than a smooth texture.)
- Infuse with cardamom and saffron
Once the milk mixture is reduced, infuse it with cardamom powder and saffron, then allow it to cool.
- Mix milk, cream, and mango purée
Once the milk has cooled, mix it with the cream and mango purée.
- Add chopped nuts
For extra flavour and texture, stir in chopped pistachios and almonds.
- Taste
Taste the mixture to check sweetness. If desired, add sugar to taste.
- Pour into moulds
Pour the kulfi mixture into moulds, popsicle moulds, or small cups. Freeze for at least 6-8 hours or overnight.
